
Bring on the fiesta! Really any day is a great day to eat Mexican food. We do enjoy Mexican food at our house. Here is what we will be enjoy tonite. Shredded beef tacos, frijoles and arroz. I am sharing these recipes with you encase you get the urge for some great eats! Horchata and Tamarindo to drink(bought at our local Mexican Store)

Machaca (Shredded Beef)
1 (2 pound) beef chuck roast
Water, to cover meat
1/2 onion, sliced
Freshly ground black pepper, to taste
2 tablespoons vegetable oil
1/2 onion, chopped
2 cloves garlic, minced
1 can Ro-Tel tomatoes and green chiles
1 (8 ounce) can tomato sauce
1/2 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon salt
Corn tortillas or Flour
Simmer 
Heat oil in large skillet over medium heat. Add 
In a blender, puree Ro-Tel tomatoes (including liquid), tomato 
Serve with warm flour tortillas and sour cream, shredded cheese, shredded lettuce, diced tomato and salsa.
Frijoles (Beans)
1 bag of pinto beans( pick the old ones out)
1 ham hock
put beans in your crock pot with ham hock. Fill full of water and cook on high for 5-6 hours or until really soft. Pick off meat on ham hock and put in a pan. Add beans to pan. Mash with a potato masher and use some of the bean water to make beans look like refried beans. So yummy!
Arozz( Rice)
Rice
2 cloves minced garlic(I use a garlic press)
white onion-diced
1 8oz tomato sauce
put a little oil in the bottom off you pan and lightly brown your rice, onion and garlic. Add enough cold water according to how much rice you used and add tomato sauce. Bring to a boil. Put lid on your pan and turn your heat down to low. As far as time it will depend on the size of your batch. For a small batch you should be good at 20 mins.
